After nearly two years it’s finally time for a recipe again! Yay!
As I’m more a cook than a baker I usually don’t do cakes very often (and maybe I should post more food than cake recipes to proof that 😀 ).
But as I promised to my friend Rafia almost half a year ago that I’m going to make a cake for her birthday it was finally time to make good on that promise.
I think for springtime there is nothing as wonderful and tasty as strawberries so I decided to make a strawberry vanillacream cake.
So let’s start at the beginning!
What do you need?
INGREDIENTS
Cake Base:
♥ 175 grams sugar
♥ 1 bag of vanilla sugar
♥ 3 eggs
♥ 90 milliliter of sunflower oil
♥ 100 milliliter of orange soda
♥ 175 grams of flour
♥ 2 teaspoons of baking soda
Topping:
♥ 400 milliliter of cream
♥ 200 grams of sour cream
♥ 1,5 bags of custard powder
♥ 2 bags of vanilla sugar
♥ 1 kilogram of fresh strawberries
♥ red glaze powder
HOW TO
To make our delicious cake we start with the cake base.
To do that, first mix the eggs with the sugar and the vanilla sugar. Add oil, orange lemonade, flour and baking powder and keep mixing until you have a good dough. After that give it into a springcake pan laid out with baking paper and bake it for 25 minutes at 180° C degrees.
Following this you have to let the cake rest for at least half an hour so it might be cooled down a little.
For the topping, whip the cream with the custard powder and vanilla sugar for 3 minutes (the mass becomes relatively firm). Give the just created vanilla cream on the cooled base.
Wash and destalk the strawberries. Afterwards start to cut them into halves (or quarters if they are too big).
Begin to decorate the pieces onto the cream. To keep the cake in shape you might use red glaze. Prepare the glaze powder as said on the bag and pour it over the strawberries.
Give the whole cake into your fridge for about half an hour.

This cake looks absolutely scrumptious! At first I thought it was a cheesecake. I’ll have to keep this in mind when baking this summer. It looks so refreshing with the strawberries <3
